Carrot Cake Didn't Rise?

My first ever carrot cake is still in the oven. It is almost done, but it didn't seem to rise much. Is this normal?

A true carrot cake recipe for me has never risen much...they are very moist...If you use a box mix though - they should rise like any other...was it scratch or box? If box...did you doctor it??

I'm glad to hear you say that a "true" carrot cake doesn't rise much. I made it from scratch with carrots, pineapple, raisins and walnuts.

I'm sure it was delicious - I wouldn't worry that it didn't rise then!!


My first ever "from scratch" carrot cake didn't rise all that much either. It was pretty dense, but according to my husband, was delicious. I'm not a carrot cake fan, so I let him do my taste testing.


Here I am responding to my original post. Yes, the cake was delicious. I was so nervous, because I made it for my FIL birthday. I didn't know that carrot cakes don't rise much and I was so afraid that I had done something wrong. I didn't want to be embarrassed in front of the whole family. Everyone loved it. They all commented on how "moist and delicious" it was.
