Anyone Have A Cherry Cake Filling Recipe?

I am making a cake for my boyfriend's father, and his favorite cake is devil's food with cream cheese icing. He loves chocolate paired with cherries, though, so I thought I might try a cherry filling. The only recipes I can find involve cherry pie filling mixed with Cool Whip which I don't think will go with my icing. Also, Cool Whip tends to break down quickly out of the freezer. Any suggestions?

I don't have a recipe for cherry filling, BUT if you wanted to you could purchase one of the 2 lb sleeves sold online of Cherry filling.....I have used it before for my father, and he loved it.....just google pastry fillings and you should find a site that sells the cherry filling among the many other fillings they have...

Is it a glaze-like filling, or more like icing? I don't really have time to order on-line, however he'll be here in two days.

You can also find cherry pie filling in a can at the grocery store; you know the ones that folks use for pie.

Canned pie filling is very yummy between cake layers. Just pipe a good dam so it doesn't ooze out the sides.

I've wondered if it would be good to put marachino cherries in whipped cream as a filling. I've been meaning to try it but haven't gotten around to it. If you happen to try it, let me know how it turns out icon_biggrin.gif
