Petit Fours - How Long Do They Keep?

I'm making petit fours for the first time, for a party Thursday night. I've already got them baked, filled and frozen. I'm trying to do a little each day for my party and wondered if I can cover them with poured fondant today and still have them fresh by then? Would they need to be kept refrigerated? Fillings are raspberry buttercream and chocolate ganache.

Because they are very small, they dry out quickly. If you are dipping them, and they are completely sealed in fondant, they will hold up a bit better. If you kitchen is warm, in this weather, they can grow mold.

After you dip petit fours or cover them with poured fondant, can you freeze them?

I don't know about freezing them with the poured fondant, but I used to make petit-fours at a bakery and covered them in white chocolate coating. They would stay fresh and moist for at least 5 days in the refrigerated pastry case. And I kept sheets of the un-glazed cakes in the freezer so that I could cut and cover them as needed.

I would feel uncomfortable leaving ganache out too long both because of the weather being hot and having them possibly melt and the fact that they are dairy....don't wanna get food poisoning going on at the party!
