I was reading American Cake Decorating dated April/May 2006 and found a reference to Mexican Paste. What is it and can it be home made.

Thank you,

It is a type of modeling paste, similar to fondant.

recipe:

Mexican Paste Recipe

Ingredients:

* icing sugar 227g(8oz)

* gum tracacanth 3 x 5ml teaspoons

* liquid glucose 1 x 5ml teaspoons (optional)

* water 6 x 5ml teaspoons

Method
Mix the icing sugar and gum tragacanth together, add the liquid glucose (optional) and water.

Knead well, then place the paste in a in a plastic bag inside an airtight container. Leave the paste at room temperature for 12 hours before using

This paste sets very hard, so is excellent for modelling. When mixed 50/50 with sugarpaste, it gives a hard drying , but pliable material.
Excellent base for stencil work.

Thank you so much for the quick response. I hope to be able to use the home made recipe. I have a problem buying ingredients here in Mexico but I hope to be able to find a place here for tracacanth.

Have to love this site and all the wonderful chefs!
