Hey everyone. A friend of mine asked me if I could make her an amaretto cake with a filling. I've never attempted one and was wondering if anyone could give me some suggestions??? I have no idea what type of filling I would use either. Any suggestions would be so appreciated. Thanks so much.

I use the Cake Dr's recipe for Amaretto cake - it's delicious! PM me if you need the recipe, not sure if it's on this site or not. Amaretto mousse is delicious in it - so is raspberry (filling, mousse or buttercreame).

fascination - thanks so much. Have you ever tried this recipe? If so, what did you think and would you change anything?
cakesbyallison - I so appreciate your help also. This recipe is similar to the one that fascination linked me up with. Have you tried the Cake Dr's recipe? The amaretto mousse sounds really good too. If you don't mind my asking, where did you get the mousse recipe?

Hello butternut,

I did try it, it is delicious, however, because you pour nearly 1/2 cup of amaretto on the cake it is super moist (almost wet, like cakes traditionally found in southern Italy); as such it is not the type of cake you can ice easily.
if you need to put icing on it, I would not pour the booze on it; I would consider sprinkling a smaller amount of the amaretto on the torted cake instead.
For the filling & icing, I would make a regular buttercream instead, and subsititue amaretto for whatever liquid the buttercream recipe usually calls for.
I'll see if I can find one of my other recipes ... do you prefer scratch cakes or mixes?

Hello again,

OK, so here is another recipe from the same site...
this one should be better to fill & ice.
I have not tried this one, but it seems easy enough & I'm thinking it would be rich & delicious.
You must let me know what you choose & how it comes out
