I made a banana cake, because I had 2 over-ripe bananas. I would like to use it for a practice cake, but what flavor icing would go with it? The vanilla wasn't right, then I tried mixing up a coconut flavored one, but it was disgusting. icon_cry.gif
Would pineapple or something work? How would I do that?
Thank you.

If you have access to different flavors, try a nut flavor (walnut? almond?) or banana cream or cream cheese. Chocolate?

Not sure what else....

This is what i use on my banana cake....YUMMY!

CARAMEL CREAM CHEESE FROSTING

12 tablespoons butter, divided
1/2 cup plus 1 tablespoon light brown sugar
5 tablespoons heavy whipping cream
12 ounces cream cheese
1 teaspoon vanilla extract
1 3/4 cups confectioners' sugar

Place 4 tablespoons butter and all of the brown sugar into a small saucepan. Cook over medium heat, stirring constantly. As soon as the mixture begins to boil, turn the stove off and add the cream, stirring until blended. Set aside to cool completely.
Once the caramel mixture is cool, cream the remaining 8 tablespoons butter and cream cheese (both should be softened) together in a large mixing bowl on medium high speed until smooth. Add the remaining ingredients and mix until all are blended in.

When I am decorating a cake I fill it with regular cream cheese icing and then mix half cream cheese and half butter cream together to ice the outside of the cake....it gives the cream cheese Icing a little more body but still has the cream cheese flavor.

Cheers,
Shirley

redsoxgirl. My banana cake turned out too moist and no one liked it much - icon_sad.gif - BUT I practically had to slap people's hands to keep them out of the CARAMEL CREAM CHEESE FROSTING you posted. icon_biggrin.gif
It's going in my favorite frosting recipe file!
Thank you for passing it on!
