Can You Freeze Cakes That Have Fresh Fruit In Them?

I bake cakes and donate them to Hospice as they need them. They called and asked for a Strawberry poundcake. They are asking all of us volunteer bakers for poundcakes they can freeze and use later. The recipe I use calls for sliced strawberries put directly in the batter. My question is, How will this cake hold up after it is thawed out after being frozen? I don't want to send them a problem cake.

Fruit breaks down when frozen unless it is flash frozen because the larger ice crystals that form during slow freezing ruptures the cell membranes. For that reason, I would say no. But because it's baked first anyway, it might be OK.

However, if you can mash the strawberries, you will definitely be OK. I've frozen strawberry cakes with mashed strawberries with no ill effects.

Maybe somebody knows for sure...

Not sure...sorry, but your cake sounds awesome....can you post or pm me the recipe. That's great that you volunteer with hospice...it is a great organization. I had no idea that they used baking volunteers...I am going to contact my local branch and see if I can be of help too.
