How Can I Make Chocolate Crunch For Ice Cream Cake?

You know... the kind inside of a carvel cake? My husband LOVES it and I want to try to make some for him. I make crunchy things for cheesecake with graham crackers and butter, but I don't think even chocolate graham crackers would give the right crunchy flavor. I was thinking about those wafers in the ice cream aisle, wdyt? tia!

This is more like it.
Take crunchy chocolate cookies.
Crumble, crunch them up, a little chunky, not completely powdered.
Mix together with some "Magic Shell" hardening type of chocolate ice cream topping.
Layer into ice cream.
This would work best for frozen items.
I worked at a baskin robbins in NJ and people would ask for that carvel cookie crunch all the time for cakes. This is what we figured out to be very similar. The chocolate coats, but then hardens when it contacts the ice cream sealing the cookies from the moisture of the ice cream.

Would probably work. That's the most convenient, for sure. Or maybe try that cookie recipes in the Whimsical Bakehouse book. They are part of the cheesecake recipes. The cookies are used to make up the cheesecake crust.
ps3884, That's good to know, best to go to the source if you can. Wish we could all have a Carvel around the corner.

We don't have a carvel here, just the ice cream cakes in our grocers freezer. I haven't had one in over a year so I remember it crunches but the taste isn't right there. Thank you for all your help!
