How To Make A Cupcake Cake? And Get Flat-Topped Cupcakes?

I was at a birthday party recently where the cake was actually a bunch of cupcakes all close together and iced all together as if it were a big sheet cake. it made for fast and easy 'cutting', which is always helpful when you have a bunch of kids waiting for their cake!

I'm thinking i'll make one for DS's birthday.

My plan is to arrange the cupcakes pretty close together and maybe tie them with dental floss to hold them a bit, then use that big icing tip to frost it and then smooth the icing.

does that sound like it would work?

how do i get all the cupcakes to bake with a flat top, is the question????

I have never made a CCC but if I were to do one I just wouldn't fill the papers as full as normal to try and prevent a dome from forming! Either that or I would just slice off the domed part!

I know I read somewhere to cook the cupcakes then pace a weighted down cookie sheet on top to flatten. I will try to find where I read that, and re-post if I find the info.

When I make cupcakes, the usually take about 1/4 cup and get a little high.

take out of oven, I place a cutting board or cookie sheet on top weigh down for a few minutes and you will have flat cupcakes.

go down the home screen and look under the articles on how to make CCC's..... they are a lot of fun to make as well. You can even fill the cupcakes for a suprise!

do a search for "cupcake cakes" in the forums .. SOOOOO many wonderful tips and pictures .. but for myself the best tip was being directed to Cali4dawn's website and her picture tutorials ...

for even cupcakes .. ice cream scoop (as suggested, I find the Pampered Chef large scoop to be the best) and while still warm from the oven,
I place a sheet of parchment paper over cupcakes then a cutting board or cookie sheet with 2 full cans on each end as weights .. leave for 5 minutes or so .. (see last picture in the above tutorial)

One more question...when you place the board or cookie sheet on the hot cupcakes, does it peel off that top layer of cake when you remove it?

the parchment paper will prevent that. also, i think you wait for them to cool completely, so it won't be as sticky. i mean wait before removing the sheet, not before weighing down.
