
Does anyone have a really good recipe for filling a chocolate cake that can withstand heat and humidity? Something other than just chocolate buttercream? I was wondering what Whipped Chocolate Ganache is? This this thick and fudgey yet able to be out of the fridge?
I usually like to fill my cakes with some form of mousse fillling, however, the cake I am making for my sister will be sitting out a while and with the heat....not sure it would be safe. Also - I am working 2 hours away the day of her party so I willl have to have it done the day before I leave and I know she doesn't have the frig space.
Anyone have a good filling for french vanilla cake too?

YOu could do a ganache filling-if you want it thick and fudgy then you would need more chocolate to cream. It doesnt need to be refrigerated. You can also whip ganache, but then it wouldnt be fudgy like you said. If you go to www.baking911.com there is a lot of good information on ganache and recipes. I think ganache is the best!!
here is another recipe that I have from squirrellycakes that doesnt need refrigerations either. I made it once, it was very good, a little sweeter than the ganache
2 T butter
3/4 semi sweet chocolate chips
6 T whipping cream, unwhipped
1 1/2 cups sifted powdered sugar
1 tsp vanilla
Place all the ingredients in a small saucepan and heat over minimum heat. Stir constantly until smooth. If you are frosting a cake, use it immediately. If it cools too much, it becomes fudge-like. If you are using it as a fillng, cool the filling to room temp. whisk and pour onto prepared cake. Remember to pipe a dam of buttercream on the cake. Let the filling set for a few minutes before placing the top layer over the filling.
