I'm wondering about this cause i can't find dutch processed where i live. BUT the Hershey store in NYC carries the Special Dark. I want to try using it for fondant and other stuff. But don't want the fondant or whatever i use it on to taste bitter. I'm not a dark chocolate fan, but would love the dark chocolate color for fondant.
A few places i have checked around home: Pathmark, ShopRite, A&P, Stop&Shop and wholefoods. Can't think of any other stores nearby.

thanks!
Kat

I use the Hershey's Special dark all the time. If I'm not mistaken, it is dutch processed. That is what I use for my recipes calling for Dutch Processed Cocoa.

You could always use a little brown coloring along with the chocolate to make it a darker brown without using dark chocolate. I'm not a dark chocolate fan either. Milk chocolate is my choice.
