Anyone Have The Carrot Cake Recipe From Cake Mix Doctor Book
Baking By projectqueen Updated 9 Jul 2006 , 7:59pm by martinez73

I think there is a carrot cake recipe in there. Does anyone have it and/or know if it is good? I don't want anything with pineapple.
I just made a carrot cake from scratch and it looks like it might be too dense, it weighs a ton. I need this cake for tomorrow so may have to make a quick "doctored" cake mix recipe. I still have enough fresh carrots to add to a mix but don't have a good recipe.
Can anyone help?

Here ya go:
1 pkg plain yellow cake mix
1 pkg vanilla instant pudding mix
2/3 c fresh orange juice
1/2 c veg oil
4 lg eggs
2 tsp ground cinnamon
3 c grated carrots (5 med carrots)
1/2 c raisins
1/2 c chopped walnuts or pecans
Mix cake mix, pudding mix, orange juice, oil, eggs, and cinnamon.
After that is mixed, gently fold in carrots, raisins, and nuts. Bake for approx. 30-35 minutes, at 350*.
These are very condensed instructions, of course. If you need more detailed or anything, let me know.
