You could make a big sombrero on top of a serape, a big cactus with a serape haging off it (in 2-D), individual taco cakes, one big taco cake, the possibilites are endless! Take a look in my pics, I have a few as well...once the galleries are up again or course! 
Be sure to look in the galleries though, there are some really good ones in there. I think I even remember one of a Mexican fellow smiling from beneath a huge sombrero....
How about something that looks like a pinata(sp?)?
