Does anyone have any suggestions for an icing flavor to go with Amretto Cake? I am going to use the recipe in the Cake Mix Doctor book, but want something to compliment the cake.

I was thinking of adding some amaretto to the icing, also, but didn't know if anyone had any other ideas?

Thanks

Leily

A light mocha or a chocolate icing would go very well. I can attest to the chocolate going well, 'cause I make amaretto truffles enrobed in dark chocolate, and they rock (in my humble opinion).

Does anyone have any other flavors besides chocolate? I know as crazy as it may sound on this board, but Chocolate is not something that is sought after for desserts around here icon_smile.gif

But if I do end up going with chocolate, what is your favorite chocolate buttercream recipe? I have actually never made a chocolate buttercream before.

Thanks
Leily

2 oz. melted and cooled dark chocolate
3 and 3/4 cups sifted confectioners sugar
1/2 cup butter, softened
3-4 T milk
1 t vanilla

Combine all except chocolate at low speed in mixer. Beat at medium for another minute, then add cooled chocolate and beat until combined and smooth.

To make it mocha, just substitute strongly brewed coffee for the milk, and use an unsweetened chocolate instead.

Add a little more liquid if necessary to get it thinner (but you already know that!)

By the way, that's just my version of chocolate buttercream.

There are many variations on the theme, and hopefully a few folks will submit theirs, too!

Thanks Karensjustdessert, I will probably try that for a chocolate cake I have to do this month.
