I absolutely love scones I have a great recipe and it is very versatile you can change the recipe from orange choc chip/ apple cinnamon/any kind of berry/raisin/plain they are inexpensive to make because you can put in whatever is in season or use the raisins when you dont have any fruit at hand. they can be the typical wedge shape or done like a tea biscut. I also love lemon merigue pie, mollases cookies/ oatmeal raisin cookies, brownies, mounds squares, mini coffee cakes (I make those often and have a good recipe for it) jeeze I could go on forever lol hope this helps


When I'm at a bakery I like to check out the finger foods, you know somehting I can eat (wihtout sharing) on the way home! Brownies are an all time favorite for many-maybe some cookie/cake bars, cupcakes, cake balls, truffles, cinamon rolls, baby eclairs, cinamon raisin bread with frosting.
Each bakery around here has a signature item-one has a magnificant cupcake, another has the best bread, another is known for their excellent truffles, another has mainly mini things-bite size shortcakes-made up with fruit of your choice/mini cheesecake bites, etc, - Maybe you could find something like that, perhaps it could have some correlation to the name of your bakery.

I really like the scone idea and I will buy one if the bakery has one because I don't make them at home (too dangerous to my waistline!).
The two bakeries I know the most about do a big business with brownies (I have a wonderfully moist recipe I will share) cookies (choc chip, sugar, ad oatmeal raisin) and with cupcakes. The cupcakes have a generic or seasonal pick or sprinkles on top.
one of the bakeries I am most familiar with also does a big business with bagels for the breakfast crowd and with pecan pie squares. I have a recipe for the pecan pie squares I will share too.

Looks like the pie offerings could be extended. cherry, boysenberry, pumpkin,sourcream apple chocolate satin...cheesecake, cream puffs, blackbottom cupcakes, sourcream rollups, mexican teacakes, peanut butterballs, rum balls, gingerbread,petit fors, rice krispie treats....
love the other ideas also....

the small ethnic bakery here in town makes a bread that has cheese ,jalapeno and bits of ham baked right in. They sell by loaf or slice and will toast it up if you ask. They sell alot to early birds who want something with their morning coffee other than sweets on their way to work. I am guessing you could just about stuff anything in it depending on the area your in.

Nanaimo bars originated in Nanaimo British Columbia Canada they are a bottom layer of graham crackers and coco mixed with coconut and butter second layer is a vanilla custard or pudding mixed with icing sugar and milk and the top layer is a chocolate coating. They are very sweet but ohhhhh so delicious and one of my favourites but a small square goes a long way as far as the sweetness goes.

I buy these at a local cake shop where I take my cake classes at, they are an awesome on my way home at 9pm snack, They are thumbnail cookies, pecan,buttery,crumbly, she rolles them in multicolor nonpareills and the center it's a soft solid colored cookie icing the solid color with the colors from the nonpareills make a real good looking yummy cookie


This has been on my mind since you posted and here's what I think. You need to find an item other than cakes that no other bakery in the area offers and make this item your signature time. Granted this will probably take some trial and error but this item needs to:
1. be unique to your bakery
2. not cost an arm & leg to bake
3. be relatively easy to make
4. should always be offered
A good example of this is a restaurant in a nearby town. People go their for their wonderful steaks. But they are really famous for their delicious orange rolls. A basket is served with every meal and they are available for purchase by the dozen. They NEVER gave out their recipe. Someone contacted Epicurious who contacted the restaurant for the recipe. Now the recipe is available for anyone AND the resturant boasts that their orange rolls have appeared in Epicurious which in turn increased business since people are driving miles and miles to eat at the resturant. Now this town is not a major city in the state either.

I make homemade biscotti, and people love it! I usually make it to give for gifts at Christmas time, or birthdays, or just to say thanks to somebody. I make mine with homemade toffee (a Martha Stewart recipe), and it is really much easier than you would think to make biscotti. Mine is not hard like a regular or traditional biscotti (so if that is what somebody wants, this is not the recipe) but it is quite a pleasant surprise to people who don't really care for biscotti because they are usually hard, to have a "softer" version. And I drizzle white and dark chocolate on top. I have also made chocolate biscotti with white and dark chocolate drizzled on top, and cranberry biscotti with white chocolate drizzled on it. So good!
I also agree with the scones. I also have a Martha Stewart recipe for scones made with oats which is so good. Then before I bake them, I make some lemon curd and cut it open, place some of the curd inside, then put the top back on on and bake. Then I mix up some powdered sugar with fresh lemon juice and use that as a glaze for the scones after they have cooled off. These are so good, and the Martha Stewart recipe is not a typical dry scone. Everybody loves these, and I am sure you could come up with different versions, too!


Blarney stones
4 large eggs
1 cup white sugar
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup boiling water
1 teaspoon vanilla
1 1/2 cups butter, softened
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
1 1/2 cups salted peanuts, crushed
For the cake:.
Preheat oven to 350.
Separate the eggs, reserving one of the yolks for the icing. Beat remaining 3 egg yolks until light and thick (about 5 minutes).
Gradually add the sugar.
Sift togther the dry ingredients.
Add the dry ingredients to egg/sugar mixture alternately with the hot water.
Stir in the vanilla.
Whip the egg whites until stiff peaks form.
Gently incorporate 1/4 of the egg whites into the batter.
Fold remaining egg whites into batter.
Pour batter into 9x13 cake pan and bake 30 minutes or until cake springs back when touched.
For the Frosting:.
Cream together the butter and the egg yolk. Sift the powdered sugar over the butter mixture and mix until smooth.
Stir in the vanilla.
Fold in 1/2 cup of the peanuts.
Frost the cooled cake and sprinkle the remaining peanuts on top of the cake.
Cut into squares (or I use a round biscuit cutter) and serve with coffee ice cream.
what they do here is cut them into big squares ice the top and sides and ROLL them into peanuts and then put a shamrock or a flower on the top.

I am native New Yorker so grew up spoiled by NY bakeries.... I love Italian pastries.... cannoli, sflogliatelle (cheese centers with strands of pastry wrapped around...so crispy), pignoli cookies (learned to make my own because they were like $16. per lb. Sometimes make them with toasted crushed almonds instead of pine nuts), cream puffs, eclairs.... Pastries... My other two favorites are pecan pie or bars and a good deep dish apple pie. Just realized I didn't name any cakes...LOL! Hmmm. Boston Cream, Italian Cream Cake, Fresh Strawberry shortcake.... I have to stop now...I'm getting hungry!!!!

There is a bakery near me that sells almond bars...they are a shortbread crust with a layer of marzipan covered in sliced almonds with a glaze drizzled over.
They are to die for (and won't give me the recipe) if you don't pre-order or arrive when they open, you don't get any.


One thing that would be nice is to have assorted treats for those who may be diabetic, or who may have a food allergy (dairy and nuts).
I myself thing of treats such as key lime pie, creme brulee, small individual slices of cheesecake, butter spritz cookies, thumbprint cookies, petit fours, turtles, things like that...of course a reasonable price is also a good thing -one of my fav cake bakers in my homestate is SO incredibly priced that I wonder how they make money...but then again they're a great bakery!


there used to be a bakery by me with a killer cheesecake, oh how i miss them! i am a believer in looking into the ethnic background of the neighborhood you are in and getting ideas from that. my family travels over an hour to get good cuban bread and guava and meat pastries (not together in one thing they are 2 different kinds of pastries) we would love to not travel that far but their are no bakeries that really cater to us locally.

great bred is always hard to find.... if you were skilled enough try making a multigrain bread or something like that ... you could even go as far as to make sandwishs on it for the lunch crowd... a bakery near me makes savory things like sausage rolls and little pot pies as well as pizza slices.... they make other things like croissants ( spinach and feta... mmm) cookies and cakes and pies ...

One of the most popular items my sister made when she owned her bakery is a pastry made with phyllo (or filo, if you prefer) dough.
She would brush a sheet of phyllo with butter, sprinkle with brown sugar, cinnamon, and pecans, and then roll them up. Brush the tops with more butter, cut into finger-length pieces, and bake until golden. They are sweet, crispy, and absolutely delicious. I think she called them pecan rolls, but whatever they were called, they are yummy, yummy, yummy!
Sorry, can't remember - were cinnamon rolls mentioned? With cream cheese icing? Man, I'm getting hungry!
