

Google "diet soda cake recipes" or "Weight watcher cake recipe". There are a bunch with diet soda that say they are weight watcher cakes (i think 4 points a slice). They don't use buttercream icing so I'm sure that helps cut down on the points! I love my buttercream though.... won't give it up. Cakes can't be an everyday treat but once in awhile..... it's just so hard to NOT eat that icing when it's in front of you... and of course, you have to taste it before you give it to your customers, right??? Another cake that is WW friendly is to take an angel food cake mix and one regular size can of fruit in it's own juice, those are the only 2 ingredients. Mix it and bake it in a 9x13 pan - I think that they are only 2 pts. a piece for that cake and it really is a good cake! (I like the pineapple and blackberry the best) you can also add a dollop of FF coolwhip as icing on them too.

LO CAL CHOC CAKE
Chocolate Cake with Chocolate Frosting

Cook Time: 35 minutes
Yield: 12 servings 3 points for 1 serving

1/4 teaspoon baking soda
3/4 cup sugar
1/2 cup all-purpose flour
1/8 teaspoon salt
1/4 cup unsweetened cocoa powder
1/4 cup boiling water
1/3 cup applesauce
1/4 cup egg substitute
1 teaspoon vanilla extract
Chocolate Frosting, recipe follows
Preheat oven to 350 degrees F.
Line an 8-inch cake pan with a circle of parchment paper cut to fit the bottom of the pan. Set pan aside.
In a large bowl, mix baking soda, sugar, flour, and salt. Dissolve cocoa powder in hot water and then add to dry ingredients. Stir in applesauce, egg substitute, and vanilla. Pour batter into prepared pan. Bake for 35 minutes. Cool cake completely on a cooling rack before frosting with chocolate frosting.
Chocolate Frosting:
8 ounces light cream cheese
1 tablespoon light butter
2 cups sugar substitute (recommended: Splenda)
1/2 cup unsweetened cocoa powder
1/8 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons skim milk
In the bowl of an electric mixer, beat the cream cheese and butter together until smooth. Add sugar substitute and beat until incorporated. Add cocoa powder, salt, and vanilla and beat until blended. If the frosting is too thick to spread, add the milk, 1 tablespoon at a time, with the mixer on low, until spreading consistency is achieved.

Thank you , thank you, thank you! I too have had to start WW and this is a big help. Now, where to buy strong tape for my mouth while decorating for others.....? LOL!

The Diet soda cake is yummy. Use any flavor cake mix add to that 12 ounces of any flavor diet soda. Bake at 350 until done. top with FF Cool Whip. I have used a vanilla mix w/ diet coke. After it cooled layered fresh strawberries then cool whip. Took it to a church dinner and I never even got so much as a smell. My pastor stuck his finger in it so no one else would want it.
