Carrots Turning Green! Help!

Ok- this is so weird. I am making a corrot cake for a bridal shower and I made one for our Anniversary (today) for my husband so he could test it. some of the carrots turned green- not all of the way, just the tips. Why???? I used preshredded carrots and the recipe calls for buttermilk, so I think that the acid in the buttermilk may have something to do with it. This ever happened to anyone?

Green Carrots?? How odd. I have never had that happen, but would love to know why it happened. The carrot cake recipe I use has buttermilk too and I have never had the problem. Also, I don't know if your recipe calls for it or not, but a tip to making it very moist is add a small jar of carrot baby food. I know if sounds strange, but it is very good in the cake. Keeps it very moist and gives it a more carrot color/taste.


I had the same thing happen to me at Easter. I didn't use any buttermilk in my recipe. I would have been so embarresed if I had taken the cake somewhere.

They put preservatives in packaged stuff... since it's meant to be thrown into salads and not baked with.
I'd just buy whole carrots and whip out your cheese grater or food processor. It's much cheaper that way as well.

I am guessing there is baking soda in your recipe since you have buttermilk in there. The green is caused by a chemical reaction between the baking soda and the carrots. You can read about it here:
