I have some bananas that are overripe. Can I freeze them for later use in recipes? I'm thinking they may be too mushy once defrosted. Has anyone done this? Thanks for the help.

Just a note though...peel them first! They spray the bananas with chemicals to help them ripen faster (My grandfather told me this, he used to work for a grocery store). If you refrigerate or freeze them, the moisture or sweat will cause the chemical to leach through the skin. By peeling them first, you throw the "chemicals" away before they can reach the fruit. Happy freezing!

OH please freeze them!!!!! icon_biggrin.gif I too have a freezer full of black bananas that I use all the time for pancakes, bundt cakes, bread....you name it, I try it with frozen bananas!!!
And when they thaw, they slide right out of the peel!
DH thinks it is gross to have the freezer door full of rock hard bananas...but I don't waste them!

I always have a stash of beautiful, black and super sweet bananas in the freezer for making banana bread, pancakes, etc. Just be aware, there is always a lot of liquid when they defrost. I just mash that right back into the banana pulp to use in the recipe.

I buy huge bunches of bananas at the supermarket, in the discount aisle. When the fruits and veggies are too ripe or just a little less perfect, they put a huge bunch in a bag, marked down at 99cents. So for that price I can get at least 4 or 5 pounds of bananas at one time.

try the cream cheese banana bread from southern Living. GREAT GREAT bread. It has an orange glaze that goes with it and sets it off.

to add to all the great answers....when they defrost they have a lot of liquid ...so what ever the recipe you are using watch the moisture content.

We love bananas...I buy them by the ton! When they get overripe, I peel them, cut them into chunks and freeze them in a ziplock bag. We use ours mainly for smoothies.

I've done this too. Does anybody know how long they stay good when frozen? I just found some in the back of the freezer, and am not sure how long they've been there!

you can freeze them but they're going to be brown, if they aren't already. when they're thawed you'll probably want to make something that doesnt depend on their white color, like banana bread or something.
