I going to be putting a lot of pearls on a wedding cake in a couple of months and I'm new at it and it takes me so long to roll those tiny little balls. I thought I could make some here and there but have no idea how long they keep on the shelf or in the freezer. Also if I do freeze them is it ok if they already have been dusted and they won't be like super hard will they?

Don't freeze them, fondant will sweat and they will stick together. Just keep them in an airtight container at room temperature. I have some that are a year old. They might be hard, but still look beautiful. They will stay "edible" for several weeks, at least.

How do you make the edible pearls by hand. I have to make some teardrops this weekend and I was wondering what tips people have on getting them the same size. Thank You

I make 3 different sizes. I just did it by trial & error. I used the coupler for large pearls. I use #12 for the next size. Then #10 for small. I roll out the thickness I want then I cut out either 2 or 3 rounds for each pearl, depending on the size I want.

I used tip 12 but I know people also use tip 10 for slightly smaller pearls. You just roll the fondant out the evenly and use the tip to punch out holes then roll them with your hands.

I made about 400 pearls a month or so ago, and when I went to use them last week they were all stuck together and rancid-smelling. They were stored in an air-conditioned room in an airtight container, so I don't have any clue what happened there.

Earlene's site says to store them long-term in the freezer, but I don't know how that works as far as condensation. I'm trying it with a few right now as a test. I sure don't want to throw away 400 more pearls. icon_cry.gif

to kelleym.........were your pearls MMF or a purchased fondant? I'm wondering if the preservatives in the pre-made fondant hold up better than homemade. Do you think that was the problem?? How old was the fondant that you used?

It was MMF and not extremely fresh...just some leftovers. I'm thinking maybe I sealed them up too fast? I maybe should have left them air drying to get hard. I will report back when I have more details, thanks guys!

How long did you dry them before you stored them? When I make them, I lay a large terry towel on a large tray. Then I place the pearls on it, trying to keep them apart. I let them dry for days before I put them together. It sounds like they weren't dry all the way.
