I followed the Whipped Cream Icing recipe exactly, however it seems as though my icing curdled.

Could someone please tell me why that might of happened?? I have to finish this cake first thing in the morning..

Thanks

Lara

Your whipping cream turned into butter!!!!
You'll have to start over, but don't beat it near as long. Cut back on the amount of time at least by 1 to 2 minutes. Keep a close eye on it. It turns very fast!
I did the same thing about a year ago.
Good luck!!!!!

Could also be the opposite. I am not positive which recipe this is, but if it's the one where you heat milk, etc then mix later with butter in mixer you might just need to mix longer. When it's first combined it looks like chunky white soup, but it does eventually come together. icon_smile.gif

Rules for whipping cream
Chill the cream, bowl and beater in the refrigerator for at least 2 hour
Beat cream until it is fairly stiff. If cream is beaten until it is warmer than 45 o,it will turn to butter. Should cream start to turn buttery, Whip in 2 to 3 more tablespoons of cold milk.
Use medium speed when whipping cream with an electric beater.
Hope this helps.
