I have a graduation cake cake for a party on Sunday. I was planning to assemble it tomorrow afternoon (Saturday). It is buttercream with buttercream and raspberry jam mixed together for the filling, and fondant daisies applied (over 100). With the fondant I do not want to refrigerate, but am unsure the filling can go without refrigeration...thoughts????
Thank you!!!

yeah, I think you are ok. I made a raspberry filling for a cake tomorrow and the ingredients were raspberries, sugar, water and cornstarch. All those ingedients by themselves do not need to be refrigerated so I figure whats the difference if you mix them together.....none! -rhondie

Preserves and jams are fine in a cake out for a few days. That is one of the pluses of using them compaired to homemade fillings.

Thank you ever so much! This is my first 'cake for hire' and I would just hate to have such a simple thing lead to disaster!
