Raspberry Filling - Refrigerate?

I have a graduation cake cake for a party on Sunday. I was planning to assemble it tomorrow afternoon (Saturday). It is buttercream with buttercream and raspberry jam mixed together for the filling, and fondant daisies applied (over 100). With the fondant I do not want to refrigerate, but am unsure the filling can go without refrigeration...thoughts????

yeah, I think you are ok. I made a raspberry filling for a cake tomorrow and the ingredients were raspberries,sugar,water and cornstarch. All those ingedients by themselves do not need to be refrigerated so I figure whats the difference if you mix them together.....none! -rhondie

Preserves and jams are fine in a cake out for a few days. icon_smile.gif That is one of the pluses of using them compaired to homemade fillings.

I usually refrigerate all of my cakes but have heard the raspberry jam/buttercream combo will be ok for a day.

This is the same thing I use for raspberry filling. It is so easy! icon_smile.gif

Thank you ever so much! This is my first 'cake for hire' and I would just hate to have such a simple thing lead to disaster!

I agree with TexasSugar, sugar is a natural preservative, so things like jams and jellies are fine and perfect for wedding cakes where cakes will be left out for extended periods of time due to decorating and the event.
