

I'm a Key Lime Pie freak, and years ago someone gave me a Key Lime Cake recipe that I just love. It's a scratch cake that includes lime Jello (used dry in the batter) and a little bit of orange juice. After baking, a tart lime juice glaze is spooned over it. It's delicious served with whipped cream. If this is different from what you already have and want the recipe, PM me.

Well I don't know the recipe you are referring to on CC, but lets just take the flavors of a key lime pie and apply them to cake.
This is sort of what I would do off the top of my head. Keep in mind, key lime pies are usually tart, so you adjust the lime flavorings for your cake.
Start with yellow or white cake, replacing extract in recipe with lime extract, also adding in lime zest. If you don't want a tart flavor, then use vanilla extract with just the lime zest. Douse the torted layers with lime moistening syrup. Use lime custard on every layer or with a combo of lime custard and a pastry or whipped type cream icing. Cover the cake in either coconut whipped, lime flavored or white chocolate infused frosting, depending on your preference.
That would be very close to a key lime cake in my opinion. Gosh, now I want to make this. I am working on a Twinkie copy cake today, my own recipe.

Several people PMd me asking for my recipe. I didn't want to bother posting it if nobody was interested, so since there is interest, I just put it up in the recipe section. It should take a few minutes to show up in the "latest recipes" box on the home page.

Well, apparently my recipe went into cyberspace. I'm not going to type all the "preheat the oven, grease and flour the pans" stuff. You know how to do that. Here's the basic stuff:
Key Lime Cake
Place dry ingredients in bowl:
1 1/3 Cups Sugar
2 Cups All-Purpose Flour
2/4 Teaspoon Salt
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 3-Ounce Package Lime Gelatin
Combine wet ingredients and add to dry ingredients:
5 Eggs
1 1/3 Cups Cooking Oil
3/4 Cup Orange Juice
1/2 Teaspoon Vanilla
1 Teaspoon Lmon Extract
Mix until well-blended - about 2 minutes. Pour into prepared 9 X 12 pan. Bake at 350 for about 30 minutes or until done.
When cool, poke holes all over the top and drizzle with:
1/3 cup lime juice
1/3 Cup Powdered Sugar
A few grates of lime zest
Refrigerate. Serve in squares, topped with whipped cream and lime slices for garnish.
It's delicious and very tart. A friend of mine has requested this cake every year for his birthday for something like 15 years!


I am useing this recipe for a birthday cake next weekend, but since it will be my first presented cake Im giveing it a complete dry run. I have it in the freezer now, but I diped the part that I cut off in the drizzle stuff, and OMG, yall have got to make this! It may very well be the best cake I have ever had in my life, no exageration!
