30Th Wedding Anniversary, 50Th Birthday Cake- For Beginner!

I have two very important cakes coming up and I am fresh out of ideas!
One is my mother's 50th birthday cake. The other is mom and dad's 30th wedding anniversary. Since everyone is born in September and they were married in September, they never have their own cakes. (Dad was born one day before Mom 2 years prior, and will get brownies without decoration, as he likes best.)
I am a beginner, I have only made MMF once but I can make roses pretty well. I would like to try a simple tier cake for the anniversary. What is the easier way to make a tiered cake?
Both events are in September but I will be making them in June when all the family is together. So they can be summer themed or autumn themed. Since this will be two cakes at once, I am thinking maybe the birthday cake should be something else- cookies or pie or something. I don't know, though, I know she's rather have a cake.
Mom loves snowflakes, autumn leaves, travel, NYC, dogs, and her family. She is an artist and an art teacher and very funny- anything slightly bizarre would make her laugh. I dont want anything over the hill or black because she wouldnt like that as much. Id much rather make her a pretty cake.
Mom and Dad both love hiking, walking the dog, traveling, Colorado and the shore. However, the cakes don't have to be about any of these things.
I would like to use homemade frosting that isn't made with Crisco but stays well on the cake- I will use the crisco stuff for the actual decorating, but nobody in the family likes to actually eat that frosting. Do you know of any good frostings I could use? It can't have raw eggs since my grandma is 90 years old.

Hmmm...check out baking911.com for Tami's buttercream. It does have shortening in it but it is very good. I hated the wilton icing but this one is good-it uses butter and cream.
For their anniversary you could make a stacked cake (the # of tiers will depend on servings needed). I really like the look of round and square cakes stacked. It could be very pretty with roses. The 30th anniversary is pearl so you could also make fondant pearls dusted with super pearl luster dust and do a quilted pattern on the cake. I think that is very elegant and pretty.
For your mom's birthday-what about a tropical theme funky cake since it sounds like she (like me) is a bit off-center! I have seen some great, beautiful cakes posted recently. There is an amazing cake posted by carrielynnfields that is beautiful and feminine without being super girly.

you could use the info about pearls from dori & leave them simple or even leave a few "brownie cakes" plain, just the way your dad likes....both parents will have what they like & family will have something to choose from

Pealr, wow, I could do a lot with that, so simple! I love the littlw brownie cakes! That would be perfect! They are born one day apart so it would make a lot more sense.
I love the tropical idea, too- she would love that.
The anniversery cake needs to feed about 20, with cake to spare for leftovers. I will try a stacked cake before this for practice...this is so fun!
