
I am making a retiring cake for my Dad's big Academic retirement on June 10th. I have a few criteria and was wondering if anyone had suggestions that would be good. I just bought the Cake Mix Doctor Book, but I'm not going to have time to try these before I need them.
1. Must be freezable
2. Must be pretty stable, I'm NOT so good at assembling and I actually have to transport this cake.
3. Two flavors that are not strawberries and pound cake (They are having a SS dessert there already)..I'm thinking some kinds of chocolate,maybe one with a liquer.
4. The icing has to be EASY and I such at icing. However, I will be covering it in fondant, so it should be smooth to cover.

I have made the "Darn Good Chocolate Cake" from the Cake Mix Doctor a few times for family and friends. Everyone that has tasted it has raved. They can't beleive it started from a mix. It is very chocolatey. Be sure to use miniature chocolate chips if you make it. They melt into the cake and just make it rich. I made it with the regular sized choc chips once and they didn't distribute evenly and they didn't melt into the cake so you were getting bites of chocolate chips along with the cake.

The Amaretto and the Rum cake are DELICIOUS!! Very moist, hold up well when frozen too.



The Darn Good Chocolate cake is by far my favorite!!! Delicous!!!! I have made it with the regular size chips and mini's. I like it both ways. It is actually the same recipe that is posted on the bag of Nestle Semi Sweet morsels - but in cupcake form. Same recipe though. I also posted it on this site if you search on chocolate cake mix cakes. And you can always use this as a base for all recipes. Like the DH French Vanilla mix with the french vanilla pudding,etc. You could add white chips (if you are sure they contain cocoa butter) or even some melted chocolate. Leaving them out is probably fine too.

The buttermilk devil's food cake recipe is very good. Very moist and sturdy for stacking. Very delicious chocolate cake.
