
I just made the arrangements to have my kitchen inspected. Of course, my home is clean and free of bugs but I just want to make sure that I haven't over looked anything. Are there any parts of my kitchen that I should pay particular attention to? For those who have done this before, were there any areas that the inspector founds faults? If you couldn't tell I'm very nervous!

the fridge and freezer is certainly going to be one place he will look. make sure you have visible thermometers in them. and paper towels to dry your hands, not t-towels. hopefully someone who has done this can give more advice.

Honestly, cleanliness is not the most important thing! They look for thermometers in the fridge, freezer, labels of food products, expiration dates, paper towels, sanitizer, sanitizer testing strips and use, hand sanitizer, and general knowledge of food contamination and the prevention of. The inspector has walked into my shop during a catering job that has EVERYTHING in total disray and a sink full (and I mean full) of dirty dishes and never even commented on it. Hello fellow NC'er! I was just inspected YESTERDAY.and I passed! I would be able to pm you if you would like. It's not that bad. I like you was so nervous, I did not sleep the night before! My inspectors were nice, I had a man and woman. The lady inspector was riding with the new inspector who will be taking over my county for inspections. Just let me know if I can advise...and relax!

Well... I spoke with the inspector this morning. He said that I don't need an inspection since I won't be selling to restaurants. I guess I did all that power cleaning for nothing. Doh!
