I tried a search in the recipes and didn't find what I was looking for so I thought I'd ask all you cookie experts. Does anyone have a lemon cookie that would taste like lemon bars? I love the taste of lemon bars and think it would be wonderful in a cookie. Someone must have thought of this before? Hoping someone has a recipe to share and I don't have to start experimenting! TIA! Jodie
Here is one that I use...
Lemon Cookies
1 box lemon cake mix
2 cups whipped topping (like Cool Whip)
2 eggs
Powdered sugar
Mix together cake mix, whipped topping, and eggs. Refrigerate 2 hours. Preheat oven to 350 degrees F. Lightly grease a cookie pan. Roll cookie dough into small balls, then roll balls in powdered sugar. Space balls evenly on cookie sheet. Bake 6-8 minutes. Remove from pan and cool. drizzle with lemon ice and sprikle with powdered sugar.
Wow! Those sound good. How do they keep? Do you ever freeze them?

LOL...I cant keep them around long enough to freeze them...
I do keep them wrapped and placed in an airtight container in the fridge. Seems to do well for as along as we have them (about 4 days...max!)
Thanks for the recipe! I can't wait to try them. I have been craving a lemon cookie like crazy...and I've never even had them before
