Alrighty y'all. I've had a request for a spice cake for a wedding. Not a big deal but I'm the kind of girl that doctors plain old cake mixes. Does anyone out there have a good doctored spice cake recipe??

I made one this weekend and just used my regular box of pudding thing. But, I used the cheesecake flavored pudding. I also added 2 tsp of additional cinnamon. It was DElicious! I couldn't really pick out the cheesecake flavor in the batter, but it was definitely a richer flavor.

I made a doctored spice cake by mixing canned pumpkin into it...
Then I filled it w/ sliced apples w/ cinnamon w/ a hint of lemon and cream cheese frosting. I made this for the Pumpkin Harvest Festival Cooking contest...
All the judges loved it . It's really good. icon_smile.gif

Actually, DH offers a very nice spice cake in a box. I have made it on several occasions, with cream cheese icing. I have never added the enhancer to it, but I can only guess that it would make it better than it already is.

Were you looking for something denser, with a banana or carrot cake texture? If someone has that trick with a box cake, I'm interested, too!

I just found a recipe on the DH website that adds a butterscotch pudding to the spice cake mix along with the other ingredients as listed on the mix. It sounds yummy!

I'm a doctored cake mix girl myself, and I've doctored the DH spice mix many times. I add vanilla pudding mix and an extra egg, I also add an extra teaspoon of cinnamon but I also add 1/4 tsp ground cloves and 1/2 tsp ground ginger.

As long as you're adding the cinnamon, ginger and cloves why not throw in a little cardamom too. It goes beautifully with those spices and is unusual and very good.

I'm going to have to try this.
