

I just got this one today, off another forum I belong to:
Hummingbird Cake
3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 eggs -- beaten
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 8 oz can crushed pineapple -- NOT drained
2 cups pecans OR walnuts -- chopped
2 cups bananas -- chopped
CREAM CHEESE FROSTING
1 8 oz pkg cream cheese -- softened
1/2 cup butter or margarine -- softened
1 16 oz pkg powdered sugar
1 teaspoon vanilla extract
Combine dry ingredients in large bowl. Add beaten eggs and oil, stirring until all
ingredients are moist. DO NOT BEAT!
Stir in vanilla, pineapple, 1 cup chopped nuts and the bananas.
Spoon batter into 3 well greased and floured cake pans.
bake at 350 for 20-30 mins or till tests done.
Cool in pans 10 mins. remove and cool completely on rack.
Spread frosting over and sprinkle remaining nuts on top.
CREAM CHEESE FROSTING
Combine cream cheese and margerine and cream until smooth.
Add sugar, beat until light and fluffy then stir in vanilla.

Like I said, I got that in a message on another forum. I copied it verbatim, so that is all the info there is. I am pretty sure it works with an 8 or 9 inch pan.

The recipe makes a 3 layer cake using the basic cake pan ....8 or 9 inches? I baked one the other day! It's delicious!

is this cake very dense? Could you use it in tiers?



My recipe is very close to the one Theresa posted. I've also seen people add 1 cup of coconut to the cake batter but I have not tried this.
This is such a moist cake that I really don't think you could do tiers, but it's soooooo good!!! Also, I store mine in the fridge. It is so moist that I have had problems with it molding if left out...even just overnight!!
Now I'm gonna have to do some baking, you guys have made me hungry for this!!


Is it suitable for cupcakes?
Oh, I think it would be great! But I don't think it would hold up well for the bouquets like Cambo's. I think they'd be too moist for that.

I have made this same basic recipe and added the coconut to it. Delicious and very moist. I also like putting nuts in the cream cheese icing. Very popular cake here in North GA.


I just made hummingbird cake for my mom for mother's day....I got the recipe from Martha Stewart's website....There is a video with it of Paula Dean and her making it together.....Cute video!......The recipe is Paula's....This was the first time I have tried it and it was a nice change....I had made cream cheese icing to go with it but I had tinted it red and it didn't work out well ,so I scraped that and used red buttercream.
