Royal Icing Roses

I would try making some Royal Icing roses. Does anyone have a favorite recipe they can share with me? The Royal Icing I have made in the past (to decorate cookies with) was basically egg whites and powdered sugar. I can't imagine using this, because the consistency was more on the liquid side than, say, buttercream which has more of a frosting consistency. Unless I made it wrong? Help please. icon_smile.gif

Have you tried searching here. Click on the "recipe" tab at the top of the page then type in "Royal Icing". Antonia74 and the Wilton recipe have the highest ratings.

This is the recipe I use and LOVE

3 1/2 c powdered sugar
4 egg whites
2 tbs lemon juice
1/8 tsp cream of tartar

whip egg whites till stiff but not dull, slowly add powdered sugar and cream of tartar, add lemon juice until it's the consistency you want. I never use the whole 2 tbs lemon juice.


It's great! Dries good and even tastes better than most.

Try the Wilton recipe using the meringue powder...

3 level tablespoons meringue powder
4 cups powdered sugar (10X is best)
6 tablespoons water (according to the humidity)
Beat all ingredients at low speed for 7-10 minutes until icing forms peaks...

Makes about 3 cups

I've used this recipes for 13 years now and haven't had one single issue with it at all, its always what I expect and it always works great for any Royal Icing decorations I've ever used it for.
