I am wondering if anyone has a recipe for chocolate covered strawberries- not just dipped in chocolate, but like chocolate covered cherries- with the gooey filling inside. I had a friend that gave me one the other day from a local shop, and it was Awesome! Thanks!



ok, I can see this will go wild----I am going to post it here. It came from the lady who taught my first cake decorating class and she does candy classes too.
Fondant Dipped Strawberries
Step 1: First wash strawberries, leave caps on.
Place on paper towels to dry. Be sure
they are thoroughly dry before proceeding
Step 2: Combine in a double boiler:
2 cups of dry fondant
1 1/2 tsp. clear corn syrup
1/4 tsp clear vanilla
2 to 3 1/2 TBSP warm water
Put this mixture on the stove on low heat and stir until blended and fluid. Dip fruit into fondant, holding strawberry by the stem. Only dip about half to three-fourths of the strawberry. Place on parchment paper to dry. You may put strawberries in refrigerator or freezer for a few minutes to speed drying time, or just let them air dry. If they start to leak, they must be put in the freezer for a few minutes before dipping in chocolate or they will ruin your chocolate. Be sure to take the double boiler off the stove to dip strawberries. Mixture may be re-heated.
Step 3: Dip strawberries in 1 pound of chocolate thinned with 2-3 Tbsp of Paramount Crystals. Place into large candy cups to set up.
Note: Fresh fruit does not keep well and should be served within a few hours. You may refrigerate for a little longer life.
The fondant powder and paramount crystals should be available at your local cake supply store.
I have a recipe for chocolate covered cherries too, if you would like for me to post that also. I may have to do some digging to find it.

You all are more than welcome. Here is the cherry recipe.
Cherry Cordials
1/4 cup butter
2 1/4 cups powdered sugar
1 Tbsp Milk (or Cherry juice)
1/2 tsp vanilla
1/4 tsp Almond extract
2 jars of Cherries, well drained
Dark Cocoa Candy Melts
Mix butter, powdered sugar, milk and flavors together. Roll into a small ball and flatten. Wrap completely around cherry. Chill for several hours. Dip is melted chocolate and set on parchment to dry.

Do you think that you could use the same recipe for the strawberries as the cherries? I don't have any dry fondant on hand......Hummmm?

I was thinking you can. You are just going to need to double or triple the recipe since strawberries are so much bigger. I'm sure it would work the same.
Just do the same with washing and letting them dry really well before you wrap them in the "fondant" and be sure to leave the stems on them.
