What do you think of this combination? I have been thinking and thinking about this. I love lemon and think that maybe the coconut would do really well as a coating over a lemon buttercream frosting. What would be a good filling...Has this been done and did it turn out? ANy suggestions. THanks!

Lemon and coconut go GREAT together, no matter how you combine it. One of my signature cakes is a white coconut cake torted with homemade lemon curd filling, buttercream frosting, then patted with coconut all over the frosting. It's so good you could sit and eat the whole thing at one time.

I love to toast the coconut so it really brings out the taste.

I just recently did a lemon cake with coconut cream mousse filling and a light scented coconut buttercream. It was for my SIL's job and everyone loved it!!
