

I would like to know this too. I have a friend who makes them for her family and for get-togethers and she said that since she has started making it, everyone requests that she bring the humming bird cake. Unfortunately, I haven't been to any of the gatherings. LOL. It is on my list of cakes to try to make this year.

Red? Red velvet cake is red but the hummingbird cake I make is not. It is similar in taste to a carrot cake mixed with banana bread....that's the best I can compare it too. It has cinnamon, oil, bananas etc. It is a big seller here!


They are wonderful! It's along the lines of a carrot cake, except with a banana, pineapple-ly flavor. Everyone around here loves them!

I get requests for humming bird all the time. It is a pinapple banana cake with the consistency of a carrot cake. I have a great recipe if you need one. I have had people tell me they hate cake but love this one. It does go great with the cream cheese icing. If I have to decorate it I use the crusting cream cheese. Try it - you will love it!!!
Oh i usually add a bit more pinapple then most recipes call for or the bananas might take over the cake!

Here is the reciepe from the cake doctor book.
1 package yellow cake mix
1 can (8ounces)crushed pineapple packed in juice, undrained
2 medium or 3 small ripe banannas, peeled and mashed (1cup)
1/2 cup water
1/2 cup vegtable oil
3 large eggs
1 teaspoon vanilla
1 teaspoon ground cinnamon
Place all ingrediants in a bowl blen with an electric mixer on low speed for 1 minute stop scrap down the sides beat on med. speed for 2 minutes divide bayyer between two pans.



HUMMINGBIRD CAKE

3 cups all purpose flour
2 cups sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 tbsp cinnamon
3 eggs, beaten
1 1/2 cups cooking oil
2 tsp vanilla
2 1/2 cups chopped bananas
8 oz small can crushed pineapple, undrained
Sift all dry ingredients. Set aside. Beat eggs, add oil and vanilla. Add dry ingredients and beat about 2 min. Add bananas, pineapple, nuts and fold in with a fork-don't beat. Bake 50 minutes at 350 degrees.
Spoon into 3 9 inch round cake pans or 2 large square cake pans. Bake at 350 for 30 minutes.
This is the recipe I have. I have not tried it yet but got it from a friend. I see that it says nuts in the directions but not in the list of ingredients. Wish I could remember who gave me the recipe.......

hey here is an update....
I made this cake the other day, and I am just not a huge fan. My husband is though. I think I was expecting a flavor cake and not one with chunks of banana and pineapple. (Ya I know I wasn't thinking). Anyhow, thank you guys so much for the recipies and responces. you guys are Great!! S

I have a friend who made one for me and my family as a gift. It was good, but I probably woudn't prefer it over other kinds of cake. Plus, My DH and kids didn't want to eat it, so I had this whole cake to myself! It was sad so much was wasted, but it didn't appeal to enough people. I like the idea of adding the natural fruit, but it did make it overly sweet in my opinion.


Hummingbird cake is an old Southern recipe and the one posted by BJ Franco is the best I've ever used. It's similar to carrot cake, but much, much better ... it's a bit lighter ... just use regular cream cheese frosting, and of course it's always good spiked with a bit of Bailey's Irish Cream

That is one of very few cakes I make from scratch also. It is a heavier kind of cake (like carrot cake) I have found that not many young people like it - but the folks that are in the 50+ generation usually love it. I also use the cream cheese icing on it. I have a customer from Georgia that requests it every year for her husbands birthday cake.

Just wanted to add....... I didn't want to use cream cheese icing on the hummingbird cake I made for my b-day, so I used cinnamon buttercream, it was delicous!

Hey y'all, the hummingbird cake is very popular here in the south. It is a most scrumptious banana cake with pineapple in it. If Scarlet had served it to Rhett, he may a given a darn.
