
Hello! i got an order for June... She would like a Lemon cake with lemon filling.
Is there a good boxed recipe for a lemon cake?? where in the world do i get a lemon filling/ I have never made this cake before! so, i would like to make one soon to test it out!!

Hello! I have no idea for the cake, but you can use lemon curd (alone) or mixed with your favorite buttercream icing to make a great filling!

I posted this somewhere las week, I make a lemon cake just about everyweek for someone! I just use plain old cake mix (lemon flavor of course!) Bake as directed 2 -9" layers is what I ususally do. I then buy a can of lemon pie filling - (Comstock brand 21 ounces can) I use about 1/2 of the can for between the layers, and the remaining filling I mix with a small container of Cool whip. I use that to ice the top and sides. I always get rave reviews on this and it is soooo easy.

I use the DH lemon supreme cake mix and I make lemon curd from scratch from a recipe I got off the net somewhere... If you are interested, I could e-mail it to you! It's really good and a tad on the sour side- just a TAD though. It makes for a nice contrast between the sweet cake and icing. Everyone I have made it for eats every last piece.

Just a note, I did use lemon pudding in a DH yellow cake mix over the weekend and made some lemon icing to go with it (1/2 c butter, 2 tsp or so lemon juice & 3 cups powdered sugar) and put seedless raspberry jam in the center. It turned out awesome! (Sorry can't help with the lemon filling)
The pudding turned out really good though, as the lemon cake mix itself is way expensive, and the yellow cakes are twice as cheap even with buying the lemon pudding.

I've used JELLO Instant Lemon Pudding with Lemon cake and it's yummy....not too sweet.

I buy the lemon filling they sale for fillings in cakes at a cake supply/party supply store... It's about $3.99 and it will fill about 3 or 4 cakes ... it tastes really good too

I also used the DH lemon supreme cake mix, but modified it according to the pound cake recipe on the side of the box (it adds pudding). Then I also used raspberry filling (from the cake supply store), and buttercream icing. It really is an amazing combination! I did this for my sister's wedding cake, and there wasn't a single piece left - they all said they never had anything so good!

Lemon and raspberry DOES sound good!!! That's now on my "to-make" list!

I have done a few white cakes with lemon filling--I use the yolks left over from the cake and make the same filling (curd) that I make for a Lemon Meringue Pie. I then ice it with butter cream. Always a big hit. Do you think lemon cake and lemon filling would be too much together??


I have never tried it, but I think that adding vanilla pudding to a lemon cake mix might tone down the lemon flavor...I would definately add the lemon pudding to the white or yellow cake mix. (Of course, that is the only one I have tried.) Maybe it would be good to make the lemon with the vanilla pudding if you are using a lemon filling...it might be less overwhelming. If you try one let us know how it goes!
