Help! Strawberry Frosting Recipe W/o Strawberries Needed

Good Morning!!

I have had a special request from a friend of mine to make a strawberry cake without using real strawberries! This is a challange as I do not have a frosting recipe that does not use real strawberries.
Does anyone have a strawberry buttercream recipe without strawberries?

Suggestion: how about strawberry flavoring? Or, if you have berries, puree them, strain, and put the puree into the icing? I'd start there. Hope this helps you out.


[edited to add:] I have made a great strawberry cake starting with a mix the past. Check out The Cake Mix Doctor ... she's got some great ideas in her book.

Actually, I had plans to try this very thing for a cake this week. Here's my idea...how about strawberry jello? Just a thought, I really don't know how it will turn out, BUT, the wild strawberry jello with the sweet buttercream might just work!

I would say strawberry flavoring. Also, you can use strawberry soda or strawberry nectar (found in the mexican food aisle) in place of milk or water to flavor. For the cake, you can use strawberry jello to flavor it.

Thanks for all the suggestions! I think I will experiment with each one and see which one I like the best.
As far as flavoring goes, does anyone know if they make a clear strawberry flavoring or will it be pink?

You know, I THINK the strawberry flavoring I used (McCormick) was clear.

I tried strawberry jello once and it just produced a grainy icing that I threw out. You would somehow have to dissolve the jello for it to work, I think. Next time, I plan on using some of the syrup from the frozen strawberries I use in my strawberry cake.

I have used strawberry pop in mine before on a strawberry cake and I thought it turned out really good. I know I have seen clear strawberry flavorings but I don't remember what brand, sorry.

I certainly don't want to "steal" a thread, but, were you doing buttercream icing? I was wanting to mix the strawberry jello with whipping cream and powdered sugar for a filling. Ever tried that?

JELLO FROSTING

2 egg whites
2 tbsp. corn syrup
2 tbsp. white sugar
1 sm. pkg. Jello

Put all together and whip to desired consistency. You can use any flavor Jello you desire. Will frost 1 cake.
