Pineapple Upside Down Cake??

I have to make a pineapple upside down cake in a few weeks for my Father-in-Law, it is his favorite...and I have never made one before! Do any of you wonderful bakers have an absolute can not live without delicious recipe that you would be willing to share with me? Thanks so much!!

AWWWW...Come on!!! I know someone has a good recipe to share!! I'm sure there are many in the "recipes" section, but I just thought that maybe someone would have a idea on a recipe that they have tried that really "stands out" you know? I have never made one, so I wouldn't know what a "good one" would taste like! I don't think I have ever even had a bite of one!!

i make mine from scratch. just a yellow cake recipe...i use the pineapple juice as most of my liquid...i mix it with the milk. if its 1 and 1/2 cups liquid I use 1 cup of the juice and 1/2 cup milk. That is going to add a lot of flavor to the cake.
I use butter and brown sugar. I melt enough butter to cover the bottom of the pan, then sprinkle that with the brown sugar. an even layer. not too much. Then I put down the pineapple and the cherries and then the cake batter.
I turn it out of the pan 10 min or so after it is baked. I normally have good sucess with all my slices of pineapple.

I use the Gooey Butter cake recipe (in the recipe section) as the base. I just mix some butter and brown sugar to form a thick syrup to cover the bottom of the pan, add pineapple slices and cherries if desired, then add the batter. With this recipe, you add the batter in two layers.
It's a little untraditional, but DELICIOUS.

I do pretty much the same thing but I add some crushed pineapple to the mix, just stir it in right before you put the batter in the pan (don't use the mixer).

Just make sure not to add too much pineapple, the 1st time I did it I added 1/2-3/4 can (20oz), it could have used more. 2nd time I added 2 cans, well I had a very wet mushy cake. It tasted good but it wasn't something you would give to anyone. I'll bet 1 can would be good, BTW I use the canned chucks, use the juice in place of the water in the bater and than chop the chunks up a bit more in the blinder and than stir it into the cake mix by hand, if you use the mixer it just gets caught in the beater.

If you do use a cake mix, use a yellow cake mix. Whatever you do, do not use the "pineapple yellow cake mix" -- it is soooo disgusting-- very fake chemical flavor to it. You can add the juice from the pineapple to your yellow cake mix, which makes it really moist. Use lots of butter-- I use one stick for a 9x13 pan melted on the bottom with a good bit of brown sugar-- the best part!!
