Anybody Have A Really Good Doctored Carrot Cake From A Mix??

I'm doing a cake for Easter and but I'm short on time due to other cakes that need to get done. So I wanted to do a carrot cake with cream cheese icing, but I want a really good, moist, rich carrot cake. I have a carrot cake mix but was hoping to doctor it up a bit to make it fantastic.

Anybody do this before?????

HELP!!!

here is the reciepe from the cake doctor book I havent tried it but the other reciepes I have tried have all been good.
1 package yellow cake mix
1 package (3.4oz) vanilla instant pudding mix
2/3 cup fresh orange juice
1/2 cup vegetable oil
4 large eggs
2 teaspoons ground cinnamon
3 cups grated carrots
1/2 cup raisins
1/2 cup chopped walnuts or pecans

I use the one on the back of the Duncan Hines carrot cake mix. It has pineapple and I'm not sure what else in it. I'm at work or I would look up the recipe. I got rave reviews from it though.

I use the cake mix doctor recipe but substitute the cake mix with a carrot cake mix. I have also used a spice cake mix and got rave reviews on that.

WOW! That "doctored" recipe sounds YUMMY! When you add a pudding mix to a boxed cake mix, how much longer does the cake need to bake and do you have to lower the temperature any?

When you add pudding to the mix you bake as usual. I made the "Dr's" carrot recipe once and everyone raved. Good luck!!

I second this one and they also have a great orange cream cheese frosting. Check our your local library, that's where I got my book from.
