I've been asked to do a first communion cake and the person would like me to add crushed pineapple to the cake mix. I've never tried this before. I'm going to use the DH white mix with the sour cream and vanilla pudding. Can I add the drained pineapple to do this with no problem. Or should I use a different kind of cake mix/recipe. Any help is appreciated. I plan on trying this out this weekend that way I have enough time to play with the mix way before the date of the event. Thank you icon_smile.gif

i think that you could add the drained pineapple to the mix with no problems. Just make sure the pineapple is drained otherwise you will have to much liquid in the mix.

I add crushed pineapple to my pina colada cake. When you add the pineapple, make sure its drained REALLY well. I actually pour the can in a tea towel and wring out all of the liquid into a big measuring cup. Then I replace the water called for in the mix with the pineapple juice. MMM! icon_biggrin.gif

i would completly drain the pineapple, and add less water to the mix.

I was just going to suggest to use the liquid in place of the water, but it was already mentioned! Great minds think alike! Definitely let the pineapple drain through a fine seive or cheesecloth for quite a stretch to be sure it's drained well. You don't want a watery cake! icon_wink.gif

I recently found Duncan Hines Pineapple Supreme cake mix at my local grocery store. I picked up a box because I was curious about it, but haven't tried it yet. Crushed pineapples would probably be good in that too. Anyone tried this mix yet?

Yes, I use it as the base for my pineapple upside down cake. It's very good, although the pineapple flavor is not strong unless you add juice, etc. But it's a great start!!
