I want to bring cupcakes to work this weekend. I want to do something different than just plain frosted ones. Any ideas for what to fill the cupcakes with? These are going to sit out for about 8 hours while everyone comes and goes, so I need something that can stay at room temp.....

thanks!!!

oh I have been on a cupcake mode myself I have made:

1.) a few of Chockylit's cupcakes. she has this wonderful site and boy are her cupcakes yummoooo!
www.chockylit.blogspot.com

made her peanut butter filled chocolate cupcakes with chocolate ganache yesterday, Yum

2.) I like the ultimate yellow cake on baking 911 with perhaps a buttercream filling and fruit preserve like respberry and a white ganache with fresh fruit on top. Or the cake is yummy with caramel frosting on
top.

3.) Did a white cake with lemon curd and frosted it with Meringue frosting and fresh blueberries on top thumbs_up.gif

4.)did a flourless cupcake with a gooey melted center. Dusted the tops with powdered sugar

5.) did a banana chocolate chip cupcake with sourcream ganache

6.) did a carrot cake with pineapple center and cinnamon buttercream frosting

ok stop me! I could go on.....

Hope this helps

Claire

Those all sound yummy!! What's them best way to fill them? Should I just fill a pastry bag and squirt some filling into the cupcake? I think I need to make cupcakes every few days so that I can try all those great ideas! THANKS!!

Hi TJSCAKES,
I use two methods to fill cup cakes:

1.) Smooth creamy not too thick fillings, like ganache or jam. I use a tip and jam it into the cupcake and squeeze until it bulges a bit.

2.) thick fillings (my favorite) like compote, chocolate chip or peanut butter, I use the cone method. Where I take a knife and cut a cone from the top and from that cone I cut off the point from the cone. I fill the hole with my filling and placed the shaved cone back on top. Hope this makes sense.

Good luck! Hope you post pictures of your creation(s)!

I think on the show Sugar Rush, they featured Bronwen Webber filling her cupcakes. Her tip was to fill them while they were still warm so that the filling expands the dough in the middle of the cupcake. Does that make any sense?

I have been using Vanilla Pastry Pride to fill my chocolate cupcakes. I usually fill them when they are all cooled and I find that if I poke into the cupcake in three different areas, I get more filling inside (all the extra holes are covered up by frosting anyhow!). I am interested in trying to fill them while they are still warm. That's sounds like it would work as well.

I fill mine with the Twinkie Like recipe on LadyCakes site. I use my Pampered Chef Easy Accent Decorator with the long skinny tip to fill them.
