Angel Food Cupcake Help

I'm going to make angel food cupcakes and put whipped cream on top instead of frosting. What I was wondering is if you could fill them with strawberry filling? Would it make the angel food cake soggy?

If the filling was on the dry side, like a thick preserve, it should be fine for a while. If you use fresh berries, the cake will absorb the liquid and probably get soggy.

if you fill right before you need to serve them then it should be fine.

have you ever made angle food cake cup cakes before. Once I tried this and it didn't rise right because of the cupcake liners. then i made it without the liners and it was fine... the cake needs to have something that is sticky to grab onto while it is rising. Just a tip, maybe your angle food cake recp. will be fine though... or you don't need the papers. Hope that is helpful

I agree with you about the liners. Angel food has to have something to cling to. What about the aluminum cupcake liners? I think that's what they are. They are silver anyway icon_confused.gif HTH K'ly

What are you going to use to prop the pan upside down to keep them from falling? I never thought about Angel Food cupcakes and it sounds like a good idea for a summer treat with some fresh fruit.

Ok I just made them and can I just say how fabulous these things are. I made them 3 different ways just to see the best way to make them. I used paper liners, I used foil liners, and I overfilled them with the paper liners. All 3 turned out great. I had no issues with the cupcakes not rising. Even the overfilled ones turned out really good. I filled one of them with strawberry preserves and used the canned whipped cream for the top. MMMMMMMM!!!! I could eat the whole batch. Even my DH liked them. I will definately make them again. Oh and I didn't need to prop them up at all. Thanks for your advice everyone. thumbs_up.gif
