Hmmm!! That recipe sounds good, but it has white wine in it.
I myself (a 14 year recovering alcoholic) would be very disappointed eating a cake with booze in it. Doesn't matter to me whether it's wine or spirits. To me booze is booze. Second- are any kids going to be eating it? It would be fine to use it as long as you let the client know there is white wine in it and they say ok.
Another thing is a mousse is not a true mousse if it doesn't have egg whites (IMHO)
I would think you could do the standard costco filling which is something like pudding mix, milk and cool whip and just use strawberry pudding mix plus some strawberry preserves maybe.
The cosco filling is:
One large (3.9oz) pkg of pudding mix
One cup milk
One cup Heavy whipping cream
Whip it all together.
Do they have strawberry pudding mix? I am not sure but I make this all the time with other flavors and everyone loves it.
I made another recipe for raspberry mouse with cream cheese in it here is the link - I am sure you could just substitue the raspberry for strawberry.

Here is what I have used.
White Chocolate Rasberry Mousse
6 oz melted white chocolate chips or white chocolate
16 0z container of "whipped topping" - room temperature
3 to 4 Tbsp pureed fruit - I just use preserves "Simply Fruit by smuckers"
I have used raspberry, strawberry, apricot
Heat the fruit a few seconds in the microwave, then mix it with the melted chocolate. Then stir in the "room temperature" whipped topping. This hold up really good and I have not needed to use an icing dam with it, it has not leaked on me.
Whipped topping, Like cool whip or something? How long is it stable out of the refrige?

I have never made a strawberry mousse, but I have a great EASY recipe for a bananna mousse and it should work just the same. You just get a box of bananna flavored pudding (in your case, strawberry), and instead of adding milk, put in heavy whipping cream. It works really well and tastes great!! Good luck!
