OK, this may be a rather silly question but do any of you line the bottom of a tube pan with parchment paper when making a angel food or sponge cake? I never have and I never quite managed to get the cake loose from the pan without messing up the brown crust. I thought if parchment paper worked; at least I would have the top (bottom) crust intact. If you have any other suggestions for getting an angel food cake out of the pan without ripping part of the crust please tell me because I've never figured it out.

I do use parchment paper, for a long time I did not and the cake would stick. I bought the paper from a kitchen store. It is all ready cut with a hole in the middle. I really don't know of any thing else to recommend, that would help you.

beccakelly you never grease the pan for angelfood cake it will prevent it from rising up the sides of the pan

use a pan with a removable bottom then cool on a bottle

then after removing the cake from the pan you slid a knife around the bottom and slide it off the cake make sure the cake has cooled an hour before taking off the bottle and out of the pan.
