I am looking for a really good recipe for low fat cake and icing. Does anyone have one that they love?

not neccesarily a recipe, but i do know that you can substitute applesauce, prune sauce, pureed fruit etc for the fats, ie. butter, oil. it adds moisture and flavor and often when i use plain applesauce, no one can tell the difference.

Diet soda cake!!!!! I should be the spokesperson for that stuff, I'm always trying to sell people on it! It's just a cake mix with a can of diet soda instead of the water, oil, and eggs that the cake mix calls for. It doesn't rise as high, but it's moist, dense, and YUMMY! You should definitely double what you would normally make, because of the rising issue, but that's the only problem I have with it. I made one today with devil's food cake, sugar-free chocolate pudding mix, a diet dr. pepper, about 1 Tbs. vanilla, and a big dallop of low-fat sour cream. I've made it without the sour cream, it's just as good, I just wanted to try something new with it today.

I've also used apple sauce instead of oil lots of times and in most cakes you can't tell the difference. The only one I wouldn't try it with would be a plain white cake.

low fat sour cream or plain yogart , powdered sugar , vanilla, citrus zest? it wouldnt crust obviously, but it would taste nice.

I see this was posted awhile ago, but it is a good topic! I suggest angel food cake with 7 minute frosting (tastes like marshmallow cream). It makes decent borders and you can use buttercream for roses, etc. (See my photo of Cinderella Cake).
