Mint Buttercream Frosting....

I'm hoping someone comes forward with their recipe for this...I'm a fan of Mint Chocolate Chip ice cream so I figure I could make chocolate cupcakes and frost them with green mint frosting...Has anyone done this before?


I would think you could just add peppermint extract instead of vanilla. If you want it to resemble mint chip ice cream you could add green food coloring too.

Funny you mention this, I did this just this morning. I've been playing around with extracts lately and wondered about putting a mint buttercream on chocolate cake. I just took a tiny bit of leftover buttercream and mixed in a drop or two of peppermint extract. I tried it on some chocolate cake scraps and it wasn't bad. I don't think I could eat a whole lot of it, but it was sort of refreshing. Definitely give it a try!

I put 1/4 tsp of peppermint extract in with the vanilla in a regular batch of buttercream. It was plenty powerful. Peppermint is much stronger than vanilla so I wouldn't replace all of it. You might try Creme De Mint. I think that's more along the line of mint chocolate chip ice cream.

Creme De Mint...that's what I was trying to think of in my earlier post...lol. I knew it was something other than peppermint, and spearmint didn't sound quite right either. Thanks Kelly!!

I have a Chocolate Chip Mint cake recipe that you may like. You could always do this as the cupcakes and do chocolate icing on top.
Chocolate Chip Mint Cake
1 box Cake Mix - White
1 pkg pudding White Chocolate
1 c water
2 T oil
4 large eggs
2 T cream de menthe (the alcohol)
½ t pepperment extract
3 drops green food coloring
½ c chocolate chips
Mix as you would any doctored cake. Wet ingredients then add dry. Mix for 2 ½ mins. Pour into prepared pan(s). Sprinkle chocolate chips over batter and bake. Dont mix the chips in the batter or theyll all sink to the bottom.
(Note: I just dump the chocolate chips in the batter and do not have problems with them sinking.)
