Freezing Butter

i have a zillion sticks of butter left after baking a huge wedding cake. can i freeze it for future use? i have no idea what the results will be when thawed and used but i dont want to do it if it will ruin them. i froze cream recently and ;when i went to use it in ganache, it separated on me and i had funky ganache. if you know what happens, share with me please! thank you!

You can absolutely freeze butter with no ill-effects. Just leave emough time to thaw before you bake with it. I do it all the time...stock up when it's a bit cheaper and freeze it. No problem!

I freeze butter ALL the time and it's perfect when it thaws! I stock up when it's on sale. I do put it in freezer zipper bags. icon_biggrin.gif

I freeze butter all the time. If you are worried about smells you can wrap them in foil. I don't have fish in that freezer so I never bother.

I buy it on sale and freze, it keeps well for a long while. I use mine up so fast I don't have to be concerned about freezer burn or odd odors but I also put mine in zip lock bags.

Yes, you can freeze butter. I also freeze cream cheese. I just rewhip it when it is thawed.
Butter keeps in the fridge however for month and months as well. It is a fat and stable while chilled. You can leave butter out in a better bell for weeks as well if you wish to go that far.
Freeze away.

Chiara,

I was always told not to freeze cream cheese. You don't have any problems with it once it is thawed?

good, i'll put it in, i have soooooooooo much left ... i also happen to have alot of cream cheese as well. Guess i'll stick that in there too! thanks everybody.

I freeze butter all the time. As long as it is well wrapped you should be fine.

Tthardy78,

I freeze it because I buy it on sale. Now if I have to serve it alone as an appetizer I would not use it from a frozen state but to mix it in a dip or the cream cheese frosting (I made last night when my elderly neighbour came for dinner) I just blend it in, it is a little chunky but it whips up just fine. NO lumps and tastes great. I also bake with it after it has been frozen. My family members freeze milk too.
