Eatable Ink Pens: Non Toxic Vs Eatable

What is the difference between Eatable ink pens and non toxic? I know one is food safe, the other (non-toxic) won't kill you. Should I care what I should be using?

Edible markers are made with food coloring, so not only are they edible but they are also compatible with food (they're not acidic, so they won't etch/melt the surface of fondant, etc.).

Non-toxic markers mean that if consumed, they won't make you sick. Unless the non-toxic markers are also acid free, they may break down the surface of fondant or gum paste, ruining the item.

I guess it's just one of those choices to make--like the dusts. For me, I have the food markers, so I use them on food items whenever the situation calls for that type of product (i.e. the item will, or may be, eaten).

If I'm doing gum paste flowers, or something else that I KNOW won't be eaten, and I need a really special color for flower throats or details, I may pull out my fine point Sharpies or scrapbooking markers.

For customers, stick to edible. For family or practice, non-toxic is fine icon_wink.gif
