I know that a mix says it is enough for a 9 X 13... but if the cake will be removed from the pan, will it look OK using one mix ?

Thanks.

It depends how deep your pan is. If you're using a 2 inch pan, this is the Wilton's 2" pan guide: http://www.wilton.com/cake/cakeprep/baking/times/party_2inch.cfm

And it says 7 cups of batter for a 9x13. A Duncan Hines mix has 5 - 5 1/2 cups of batter per package, the Pillsbury yields less.

I always use two mixes to get a good height.

Thank you both !!! then two is what I'm going to use. I think I'll be happier with the extra height.

I use Duncan Hines w/jumbo eggs so I think I get more batter out of a mix. I use 1 1/2 for a 9 x 13. I suppose it depends what you add to your mix etc. I like more height also. At least to the top of the pan. It also makes it easier to level if needed.

I always mix longer, and make them fluffy. But it doesn't hurt to make two packages and then just make a small 6 inch, or cupcakes with the leftover.

For a 9x13 I like to use about one and a half cake mixes, then I use the extra for a small cake that the kids get to eat!

It just seems like one isn't enough.

I just finished... made 2 mixes and used most of the batter. It did take a lot longer to bake... but afterwards I realized I had placed it a bit low in the oven... so that probably didn't help !

I'm very pleased with the height.

Thank you all very much !!! It is so great to have found a place to ask these last minute questions.
