Umm eat it! It's good over ice cream or just on a spoon.

I had some last week that I refridgerated overnight and the next am tried my best to roll into balls and then into powdered sugar! Took them to work and they were gone in minutes!

am I too late to answer? I take mine and put it in the fridge to get it hard. Melon ball it out and roll into crushed fine and toasted almonds. Then dip into melted chocolate or roll lightly into cocoa powder. OR you could just eat them without the chocolate covering like I do instead of going to the gym You could also put it into the fridge and save it then pipe it into something kind of like a cream puff that's sprinkled top with powdered sugar. Or you could warm it up just a little and pipe into an eclair. OMG, I'm so hungry now. I hope your happy now I have to go to the fridge and look for something sweet

I made mini Chocolate cheesecakes and poured the ganche over the top. Also made filled chocolates with it and mixed flavored liquor with the ganche for the filling, it was great! I just save it in the fridge have make different treats nightly. Small sizes though so I do not get to be a bigger size!

Nope, not too late at all. I put it in a container, covered it and now it's in the fridge. I really like the ideas of melon balling it out and rolling it into nuts of sorts. Almonds would be good!!!
I'm so sorry that ya'll got the chocolate cravings now! Definately take a sneak when the kids aren't looking! That's funny!!! I thought I was the only one that did that!!! Some things I just don't want to share you know!
Thank you everyone for the new ideas for left over ganache!!!
Amy

Forget what everyone else is telling you & listen to me... Mail it to me!!!!!!!!

Isn't it though?! A great idea! Just the phrase "melon ball it" makes me think of soft creamy luscious (okay luscious might be taking it a bit far) chocolate that melts in the mouth. Ya'll know I have a show cake I am working on. I can't be side tracked with all this talk of truffles and what not!!
Amy

Alright Amy that's enough!! I've already had my sweets for the day... the girls on the weight loss support group thread will kick my butt for sure! Truffles do sound sooo good though! Glad I don't have any chocolate in the house!

ooohhhhhhh OMG That sounds like it is worth trying!!

Balls of set ganache rolled in powdered sugar or cocoa paowder, can you say Truffles?
I save leftover Sarah Bernhardt glaze which is similar in texture to set ganache, freeze it and when I make a chocolate cake I thaw and put it in a piping bag with a #10 plain piping tip and use it to make my dam and to fill in the line on the outside of the cake where the two layers join together. It uses up the ganache, and filling in that line where the two cakes meet prevents the dreaded bulge problem at the same time. Just smooth the piped line with an icing spatula and then crumb coat and final icing. If you have a fairly large amount of ganache left you can also use it to crumb coat the chocolate cake.

Mommycake:
I live in Tacoma we can always meet half of the way and I will eat your ganache. I am a declared chocoholic.
But I am glad we a bit far because I am still trying to lose the 10lbs. I gained during Christmas.
