Are the eggs cooked in Tiramisu? From what I understand they are not. Does anyone have a recipe where the eggs are cooked?

Tiramisu is spongecake or Lady fingers dipped in coffee syrup layered with marscapone cheese and whipped cream with or without brandy and chocolate. Raw eggs are not a normal component of Tiramisu.

I have a recipe that uses a custard, that is then folded into a whipped cream mascarpone mixture. So the eggs are cooked. If you'd like the recipe PM me your e-mail and I will send it to you. It is the closest recipe to real Tiramisu I have found.

They are cooked. The egg yolks are mixed with sugar and cooked in the top of a double boiler. This forms the base of the mascarpone custard.

BTW - if you ever do run across a recipe that calls for raw eggs (such as Cesar salad dressing or egg nog) you can purchase pasturized eggs - they are safe to eat raw as the pasturization eliminates any salmonella that may have contaminated them (which is actually extremely rare to begin with).
