
I had asked Talmas how she got her oreo cake to be dark brown like a real oreo and she said she added some black to chocolate icing. I did the same tonight and I swear they look like some really awful poop colors. Now I look at the pictures I took to show you guys and they don't look so bad, but i *swear* they look awful in my kitchen and I don't know how else to get that oreo color!!





I *promise* that if you take the advice in this forum (add more black and let the color develop) you will get the color you're looking for.
For that much icing, you will likely have to add an entire 1 oz bottle of black gel color, if not more.
I only make black icing from chocolate buttercream, and it takes a LOT of black and some time to develop.
Don't give up!

I really do appreciate the advice but I got to thinking about doing it and using that much black color. My tongue, this morning, is still dark from the little bits I tried of the icing to see if the taste was changing from the amount of color. I can't imagine eating a piece of cake with icing all on it. I think it will definitely get better reviews if I use dark fudge store-bought icing.
Any thoughts on how to stiffen store bought icing without sweetening it? Cornstarch I guess?

to stiffen icing you add more powdered sugar, but if you were making chocolate I think you could add rich cocoa powder.
I've added a bunch of cocoa powder before and came out with really nice chocolate icing.

What you need to do is to start with Black Cocoa Powder. This is available at some specialty gourmet shops, and of course, online. This is what gives Oreo's their black color. NOT food colorings. Beforwarned--this is MESSY stuff! But well worth it, not only is the coloring fantastic, but the deep, rich flavor can't be beat.

I made the Wilton Chocolate Buttercream with half butter, half crisco the other day....That recipe calls for 3/4 cup cocoa to a cup of fat....Anyway, I used the Special Dark Hersheys cocoa and my icing came out very dark, almost black....You might want to try that.....
