Ganache On Ice Cream Cake...help

ok, so i want to make an ice cream cake and then pour ganache over it and then decorate...very simple decorations...last time i tried this as soon as a poured the ganache on the ice cream it got solid really fast and looked terrible..
can anyone help??

Maybe try a whipped ganache. it's a little thicker so maybe it won't set up that quick on you. I use this recipe and love it:

i know what you mean, but i want to pour it on...

you could try icing the cake twice: once with cooled ganache with a palette knife, kind of like a crumb coat so there's a bit of a buffer between the ice cream and the final layer of ganache. then pour the warm ganache over that, by pouring a generous amount in the centre of the cake, and quickly dragging the pool of it with a flat palette knife from the centre and towards the outer edge of the cake and let in spill down the sides. most commercial mousse cakes are covered in just one layer of very warm ganache while the cakes are frozen. the speed of the application and the thinness of the ganache (about 1:1 chocolate to cream ratio or less, i.e. more cream than chocolate) is ideal.
